Christmas is the best time of the year. It is joyful, inspiring and wonderful! It is also the perfect time to make these Reindeer Muffins. I made this recipe from scratch. Everything is handmade except  for the ears. I’ve decided to do this for few reasons. I wanted to show that, no matter where you are, you can still make awesome vegan reindeer muffins : the ingredients I used are available in almost every place on the planet. Then I also wanted to make it as cheap as possible. Vegan things in the city I live in are sometimes unaffordable!

For the 12 muffins
  1. 200 gr whole grain wheat flour
  2. 70 gr brown sugar
  3. 80 gr cacao
  4. A pinch of baking soda*
  5. 100 ml sunflower oil
  6. 250 ml lukewarm water
  7. 1 tablespoon Dutch speculaas** or mixed spice
  8. Handful cranberries
  9. 50 gr dark chocolate – optional
  10. 2 tablespoons apple cider
For the frosting
  1. 50 gr soy butter
  2. 2 tablespoons icing sugar
  3. 2 tablespoons cacao
  4. A bit of rice milk – or any other plant-based milk.
You will also need
  1. 24 pretzels
  2. A small piece of red marzipan
  3. 1 tablespoons icing sugar mixed with few drops of water for the eyes
  4. 50 gr melted dark chocolate
  5. Vegan cookie you can buy or make yourself by using the recipe for Christmas Ginger Cookies from this website
Instructions
  1. First make the muffins. Preheat the oven to 180C. Mix first all the dry ingredients, cranberries and chocolate if you use. Add then oil and water and stir it good. You should get a yoghurt-like dough. As the last add the vinegar. Pour the dough in the muffin baking dish and bake for about 30 minutes. To make it easier use the muffin baking paper.
  2. Next make the frosting. Remember: put the frosting only on the cold muffins. So first mix the soy butter with the sugar. Then add the cacao and give it a good stir. If needed add only a bit of plant-based milk.
  3. Now make the noses of the reindeers. Use the marzipan and make small “pearls”. Dip each nose in the melted chocolate and place it on the baking paper to dry. Don’t forget to leave one red nose for Rudolph.
  4. And now we’ll be making the reindeers.
  5. Cover each muffin with frosting using the knife.
  6. Place the pretzels at the ends to imitate the antlers.
  7. On the opposite side place the cookie and on top of it put the nose. You can glue the nose using the same chocolate you were melting before for the noses.
  8. Now make the eyes. Mix the icing sugar with a few drops of water so that you get a firm dough that you can easily shape with your hands. Make the eyes and press them between the cookie and the pretzels. Then use the toothpick, dip it in the chocolate and finish the eyes making the eyeballs.
  9. And your reindeer is done.
Notes
  1. * Use not much because the muffins shouldn’t rise much but they should also not stay flat.
