Ingredients
  1. 1 red onion
  2. 1 medium sized broccoli
  3. 1 potato
  4. 2 small carrots
  5. Vegetable broth/bouillon cubes
  6. 1 teaspoon coconut oil
  7. Water
  8. Salt and pepper – optional
Instructions
  1. Heat up a pan with some coconut oil. Add chopped onion and fry it for a minute or two.
  2. Add the carrots and give it a stir.
  3. Add now potato and broccoli and pour enough boiling water to cover the veggies.
  4. When it starts boiling again in the pan, lower the temperature and add the vegetable cubes.
  5. Put the lid on but don’t cover it completely and let it cook for 10 minutes.
  6. Set it of the fire and use your hand blender to make the soup creamy.
  7. Now add salt and pepper if you wish and your soup is ready!
