I just love soups. Any veggie soup works great for me. But my absolute favourites are cream soups that my mum started making when my sister and I first became vegetarians. This Celery Cream Soup is one of them with some tiny changes so that it meets my style. Sorry, mum!
- 1 celery
- 2 small potatoes or 1 big
- 2 carrots
- Vegetarian bouillon or mix of dried veggies *
- Pinch of ginger, salt, curcuma and, if you like it, curry
- Chop and boil all veggies until they are soft. Use your hand mixer or blender to blend it. If you are using a blender, you should get some really mashed potato like mass without chunks of veggies. Put it then back to the water and let it cook for a few more minutes on a low fire. When you add it back to the fire, add all the spices and boullion. Try to see if you would add more salt or other spices. **
** If you like pepper, this would be the perfect time to use it.
