Ingredients
  1. 200 gr whole grain wheat flour
  2. 80 gr cacao powder
  3. 100 gr brown sugar
  4. 100 ml dark coffee
  5. 200 ml almond milk*
  6. 100 ml sunflower seeds oil
  7. 1 tablespoon baking powder
  8. 1 vanilla pod
  9. 1 teaspoon allspice
  10. 2 – 3 tablespoons dates syrup
  11. 2 tablespoons apple cider vinegar
  12. 300 gr marzipan or more
  13. soy whipped cream - optional
Instructions
  1. Preheat the oven to 180 C.
  2. Mix flour, cacao powder, sugar, spices and baking powder.
  3. Add oil and mix.
  4. Add now the dates syrup. Stir well and only then add the coffee and milk.
  5. Make sure that you have no lumps and that the dough is the consistency of an yoghurt.
  6. As the last add the vinegar. This will help the baking powder do its job and the cake will rise.
  7. Take now a rectangular or square baking tray and smear it with some soy butter. Make sure to cover all edges.
  8. Pour now the dough in the tray to half and place the marzipan in the middle. It will go down but that is ok. Pour the rest of the dough over it and place it in the oven for 35 – 40 minutes.
  9. When the cake is cooled down, decorate with some soy whipped cream and chocolate sprinkles.
