
After Father-in-law’s birthday cake, it is now time to make Mother-in-law’s birthday cake. This one is Chocolate Cake with Marzipan. This Chocolate Marzipan Cake is very easy to make. Everyone loves chocolate and almost everyone likes marzipan. Here you only have to make sure to have vegan marzipan.


- 200 gr whole grain wheat flour
- 80 gr cacao powder
- 100 gr brown sugar
- 100 ml dark coffee
- 200 ml almond milk*
- 100 ml sunflower seeds oil
- 1 tablespoon baking powder
- 1 vanilla pod
- 1 teaspoon allspice
- 2 – 3 tablespoons dates syrup
- 2 tablespoons apple cider vinegar
- 300 gr marzipan or more
- soy whipped cream - optional
- Preheat the oven to 180 C.
- Mix flour, cacao powder, sugar, spices and baking powder.
- Add oil and mix.
- Add now the dates syrup. Stir well and only then add the coffee and milk.
- Make sure that you have no lumps and that the dough is the consistency of an yoghurt.
- As the last add the vinegar. This will help the baking powder do its job and the cake will rise.
- Take now a rectangular or square baking tray and smear it with some soy butter. Make sure to cover all edges.
- Pour now the dough in the tray to half and place the marzipan in the middle. It will go down but that is ok. Pour the rest of the dough over it and place it in the oven for 35 – 40 minutes.
- When the cake is cooled down, decorate with some soy whipped cream and chocolate sprinkles.
- * You can use any other plant based milk.
