Ingredients
  1. 300 gr white flour
  2. 100 gr shredded coconut
  3. 100 gr brown sugar
  4. 80 gr roasted hazelnuts
  5. 2 tablespoons ground flaxseeds
  6. Seeds from 1 vanilla bean
  7. 1 tablespoon baking powder
  8. 300 ml soy milk or any other plant-based
  9. 1 tablespoon coconut oil
  10. 50 ml sunflower seeds oil
  11. 1 tablespoon apple vinegar
  12. + 100 gr dark chocolate for the icing
Instructions
  1. Melt the coconut oil. Make sure not to use high temperature for this. Ideal would be room temperature or light steam.
  2. Mix all dry ingredients in a separate bowl.
  3. Add soy milk and mix it well.
  4. Add then the sunflower seeds oil.
  5. And only then add the melted coconut oil.
  6. Make sure to mix it good.
  7. Before you put it into a baking tray, add vinegar to the mixture. And then pour the dough in the baking tray. I used 22cm round shape, but any other would be just fine.
  8. Bake it for 30 minutes on 180 C.
  9. Wait for the cake to be completely cooled down and then smear the chocolate over it. For this you will need to melt 100 gr dark chocolate.
