Easter is my favorite Holiday. Easter in Serbia is so beautiful. The weather is always nice and my family usually gathers around for Easter brunch. These Lemon Cookies brought back those wonderful memories.
- 100 gr white flour
- 50 gr rice flour
- Pinch of baking soda
- Zest of one lemon
- Juice of 1 lemon
- 50 gr brown sugar
- 50 gr soy butter
- 1 vanilla
- 1 tablespoon ground flax seeds
- Mix all dry ingredients in one bowl. Zest then one lemon in it and add soy butter. Add spoon by spoon lemon juice and make dough. Add just enough lemon juice to get dough. You may not need to use all juice.
- Leave the dough to rest for 30 minutes.
- Flour the working surface and roll the dough. Use your cookie cutter to cut the cookies. Place them on baking tray with baking paper. Bake the cookies for 10 minutes on 180C.
