Miso soup is just what you need to warm up when it’s cold and rainy outside. It’s the perfect food that will give you nutrients and energy for the day. If you eat it in the evening, it will make you forget all the stress you had during the day and give you that peace you need before going to bed. I like eating this soup in the evening. In our house it’s usually combined with a blanket and a nice movie on TV. So let’s make this soup then!

Here’s what you’ll need
  1. 220 gr precooked chickpeas
  2. 80 gr buckwheat noodles
  3. 1 onion
  4. 2 cloves of garlic + 1 teaspoon dried garlic
  5. 1 teaspoon miso paste
  6. 2 teaspoons soy sauce
  7. 1 carrot
  8. Curry powder, turmeric, coriander, cumin, salt
  9. Water
  10. Fresh chives for garnishing
  11. A bit of coconut oil
Instructions
  1. How to make it? Heat up the oil and add turmeric, coriander and cumin until they start releasing that wonderful smell. Add now chopped onion and fry for a few minutes. Now add chopped carrot and chickpeas. Give it a good stir and add enough water to cover the ingredients. When it starts boiling add the noodles and garlic. When carrots are cooked, the soup is ready. While it’s still boiling add salt and curry. Set it of the fire and add the miso. Stir and put the lid back on. Let it set for 15 minutes before you serve it.
Notes
  1. Now pour the soup in a bowl and garnish it with some fresh chives.
