Almost every Sunday I am making pancakes for my hubby and me. He loves pancakes for breakfast so these Spelt Flour Pancakes were a hit. I am still discovering spelt flour and all the possibilities it offers.

Ingredients
  1. 1 cup spelt flour
  2. pinch of baking soda
  3. 1 teaspoon baking powder
  4. 1 tablespoon soy butter – room temperature
  5. 2 tablespoons apple sauce
  6. 5 spoons soy milk with 1 big tablespoon ground flaxseed
  7. 100 ml soy milk
  8. 1 vanilla pod
  9. Coconut oil for baking
Instructions
  1. Begin by combining 1 tablespoon of flaxseeds with 5 tablespoons of soy milk. In a separate bowl mix flour, vanilla, baking powder and soda.
  2. Add soy butter and stir well.
  3. Add now the soy milk, flaxseeds and whisk until mixed.
  4. As the last add the apple sauce.
  5. Heat up a teaspoon of coconut oil in a baking pan. Pour 2 – 3 tablespoons of dough and spread evenly. Don’t make the pancakes too big.
  6. Bake each pancake on a medium fire for 2 - 3 minutes on each side.
  7. Serve with some malt/agave syrup and chocolate sprinkles. You can also serve them with some fresh fruit like blueberries.
