I was lucky to have found beautiful, juicy and sweet strawberries the other day in the market in The Hague. I you are following me, you know that I do go there often. I don’t live near The Hague but when I go there I always make a day out of it. I spend the whole day with my friends that live there and I visit the market.

So is there a better way to use strawberries than in a delicious, vegan Strawberry Tart?

Ingredients
  1. 100 gr whole grain wheat flour
  2. 50 gr plain white flour
  3. 50 gr rice flour
  4. 70 gr of ground hazelnuts
  5. 70 gr soy butter plus some for greasing (room temperature)
  6. 50 gr or more brown sugar
  7. A pinch of salt and baking soda
  8. Almond milk
Filling
  1. 500 gr strawberries
  2. 2 tablespoons corn starch
  3. 100 gr brown sugar
  4. 100 ml water
  5. Juice of one lime
Instructions
  1. Mix all flour in a bowl and then add hazelnuts, salt and baking soda.
  2. Add now the soy butter and use your hands to form a dough.
  3. Add slowly almond milk to help you form dough. Don’t overdo it.
  4. Let the dough set for 30 minutes.
  5. On the floured surface roll the dough until it’s 1 cm thin.
  6. Grease the baking tray for tarts with loose base bottom and preheat the oven to 200 C.
  7. Place the dough in the baking tray.
  8. Using a fork make holes on the bottom and sides of the dough.
  9. Bake it for 30 – 40 minutes. After 30 minutes check if it is done. Quickly press the bottom with your finger. If it is soft, let it bake for another 5 – 10 minutes.
  10. Now make the filling. Use 5 – 8 strawberries and mash them in a separate bowl.
  11. The rest of the strawberries cut in small pieces. I like it when they are irregular shape and size.
  12. In a sauce pan put the sugar and corn starch. Turn the heat on.
  13. Add water and stir. Add the mashed strawberries and cook on low heat while stirring regularly until you get a thick sauce.
  14. Let the sauce cool off before you add the strawberries and lime juice. Combine it good and pour over the dough.
  15. Set it in the fridge for a few hours.
